All week I’ve been sharing some of my most cherished freezer friendly recipes. They have also all been recipes individual portions with a combo of protein and veggies mixed in to make them fantastic, healthy grab-and-go meal options. Ideally we all want to sit down and have a relaxing meal, but the reality is that we are running around trying to fit five million things into one day. And if you don’t plan ahead and find yourself starving, you will fall victim to the ease of fast food.

In addition to having my freezer stocked with slow cooker freezer recipes for sit down family dinners and leftovers, I also have a collection of grab and go freezer meals at the ready that are all gluten-free or grain-free and dairy free. Here are the ones I’ve shared this week:

-Mini Meatloaf 

-Opa’s Empanadas

-Spinach Pie

-Chicken Tenders

When you do freezer cooking, you can cook as you go making double batches of everything and slowly build your freezer stash (by making one meal for dinner that night and one meal for the freezer) or you can do bulk cooking days and bust out a bunch at one time. I waffle back and forth between doing a bulk session and consistently adding to my freezer.

  • 4 pounds ground beef
  • 2 pounds boneless, skinless chicken breast
  • 1 pound of bacon
  • 15 eggs
  • 5 10-ounce bunches of fresh spinach
  • 10 ounces frozen spinach
  • 4 carrots
  • 4 large onions
  • 2 large red bell peppers
  • pie pastry
  • pie crust
  • almond flour
  • coconut flour
  • coconut oil
  • raisins
  • green olives (optional)
  • salt
  • pepper
  • cayenne
  • cumin
  • garlic powder
  • freshly grated nutmeg
  • onion powder
  • paprika
  • dried thyme

P.S. if you are curious of what is on the right side of my freezer meal stack, it’s individual portions of homemade chicken stock and homemade almond milk. I make big batches of both every couple of months and then freeze them in one cup portions and pull them out as needed for recipes.
