I love gardening so much. It has long been a tool for coping, healing and pure enjoyment. I get to be outdoors on a beautiful day and am getting exercise at the same time. Sometimes walking and yoga can get boring, but with gardening you are squatting and strengthening muscles without even realizing it!
I feel a sense of pride and accomplishment when I grow a vegetable and cook it for dinner. To be a part of the full circle from seed to dinner table connects me to the earth and to my ancestors, and that connection makes me feel alive, happy and emotionally balanced.
I love gardening even more now that Penelope is here with me. When she sees a seed has sprouted or later when it has bore fruit, her joy and excitement is wonderfully contagious. And I know the reason she eats broccoli, carrots, spinach, and eggplant in spite of issues with food from her SPD is because she grew them and wants to taste them.
One day I will realize my dream of having my own farm, and I will be a fourth generation farmer. I am proud to have farming in my blood and my lineage. Even if there hasn’t been a farm in your family for generations, somewhere in your lineage is a farmer. It’s part of our collective consciousness to grow, nurture and harvest.
Because gardening is so important in my life, I want to share everything I know with you, along with some of my favorite fresh, grain-free recipes. I make slow cooker freezer recipes 75% of the week, but love to pepper in fresh meals and sides throughout the week for the pure joy of cooking and to add fresh vegetables to our diet, too.
