Radish Cream Cheese Dip

Radishes are probably one of my favorite vegetables.  I like to slice them and eat them raw or make a cream cheese dip with them.

I was in the mood for  a dip and thought it would be fun to do with Penelope.  See that little Buddha Belly in the back ground?  I could eat her for a snack.

This dip is super easy.  You will need:

8 oz of cream cheese

1 bunch of radishes

a few basil leaves

salt and pepper to taste

Blend it up in a food processor and enjoy!

But don’t turn your head for a second!  Or it will end up on the floor.  And on the learning tower.  And on the fridge.  And on the curtains, way back in the eating area.   And on the dog (look at his legs, it splattered all over his legs and chest).

Yeah, it was fun for Penelope.  :)

  1. That recipe looks super yummy! I enjoy radishes too but other than one go-to recipe and eating them raw, I haven’t known what else to really do with them. Thanks for the sharing! I also LOVE the pictures. My favorite is little Penelope standing on her tip toes in the last picture. Too cute!

My daughter also had a buddah belly… it melts my heart! I love it!!

  3. Hahaha… love that girl! These looks absolutely AMAZING! There is a raw broccoli salad I make with radishes that would be right up your ally. I can’t follow a recipe to save my life, so I just wing/wing/wang it, but basically, it’s raw broccoli, radishes, almonds, and bacon…. Add some evoo if you’d like or other chopped veggies. I got the initial recipe from a paleo site a while back for the inspiration, but don’t recall exactly where.

I love it! How is your tower so clean? Ours is covered with paint, putty, oobleck, you name it…I even wash it weekly, and as needed, but have already decided that it is never going to be resold!

    • I am sort of neurotic and scrub the heck out of it, the second it get’s dirty or anything spilled on it, so I haven’t had much set in stains. It’s not as clean as it was when we bought it, but hopefully we will be able to resell it one day! ;)

Do someone a favor and resell it anyway. The one I bought third hand had been sitting outside in the soggy, mildewy NW weather for over a year. It had to be sanded and refinished. Some people who could never afford one otherwise will gladly take a gunky one and fix it up. And Learning Tower customer service is super amazing. Some of the supports were beyond repair from water damage, and they sent brand new supports and a complete set of screws absolutely free, even though I wasn’t the original owner.
