I had a hankering for a hearty grilled cheese sandwich the other day. Grilled cheese is probably one of my most favorite comfort foods, but I grew up on the fake butter, white bread and cheese-slice-in-a-plastic-wrap kind.
I wanted to see if I could come up with a healthy verision that still fit the bill.
I bought some fresh basil the other day because I wanted to put them in my scrambled eggs, so I still had some of that on hand. I also had some fresh baby argula, tomatoes, bacon and two different types of cheese and I figured all that combined might make a great grilled cheese sandwich.
And, boy did it!
I used sprouted spelt bread. Now, I know the bread can make or break a grilled cheese, but to make it as healthy and digestible as it can be, a soaked/sprouted flour type of bread is best.
I used a big helping of grass fed butter.
I use raw cheddar cheese and Thomasville Tomme from a local farm.
Then I added bacon, basil, argula and tomatoes. I added a little sea salt to the tomato.
And voila! A hearty and healthy, and most importantly a satisfying, grilled cheese sandwich!
