Seriously.
This salad is the holy grail of salads. It tastes amazing and it is highly nutritious.
After I eat it, I feel like some should give me a sticker that says ‘good job’ or something. I feel so proud of myself for eating this instead of cheese and crackers, which has sadly been my lunch more often than not, these last few months, with no energy to even heat up left overs.
Usually, when I eat salads, it leaves me wanting more of something to eat. It never really fills me up, or keeps me full for long.
But this salad, will fill you up and keep your tummy quiet for hours.
On a side note, most Real Foodies do not eat raw spinach. They only eat it cooked. In my gut, I feel like my thyroid is fine and I digest the spinach fine. I don’t eat gallons of raw spinach, maybe a salad or two a week, so I think it’s a OK for me. But I’m no expert, I am just telling ya’ll what I eat.
Also, I have to give credit where credit is due. I did not come up with this salad. My mother-in-law did. I can’t tell you how many things she has taught me how to cook and make. I am so grateful for her kitchen-and laundry, for that matter-expertise.
Here is the recipe:
Ingredients
- A bowl full of spinach leaves or whatever greens you have on hand
- A half of a tomato chopped
- Half of an avocado chopped
- Some chopped onion
- One hard boiled egg, chopped
- Sea salt and pepper, to taste
- Raw apple cider vinegar
- Extra virgin olive oil, to taste

This is fabulous!! Using the raw apple cider vinegar aids digestion, as well. So do other FERMENTED foods!
LOL I eat raw spinach all the time. Id eat it by the handfuls when I was preggers. I didnt know there was a risk in it. …..

mmmmmm, going grocery shopping and will have to pick up for this!
I also add bacon to this and balsamic vinaigrette for the dressing. A little grating of parmesan as well.
I add bacon sometimes too, so yummy!
